That means your cat stares better, lol
Well, in all honesty - dogs are actually scared of CATS, cats can really use their claws and damage their opponents to blood. I used to have a cat (she) and one time she fought this younger cat till it bled and later that cat died!!! Another thing about cats - under their claws they have this specific poison/chemical created that makes healing of wounds that much longer and painful, and of course it leaves scars.

The pitbull knows that cats have long sharp claws, and a swatch on a tender part of the nose really hurts.
But, how is this pitbull attacking your gray cats? Is he not leashed or behind a fence? This is dangerous because he could kill the cat, or gets so excited that he becomes dangerous to humans. Also, are your cats in the pitbulls territory? or is the dog on your property? There is something wrong, and building a good cat fence for your cats to live safely or keep them inside will keep your cats safe.
*I am not saying pitbulls are dangerous, any dog off leash and out of fence who is chasing things can be dangerous.

Because it knows from experience that Oreo is the Top Dog, in the neighborhood.
Its possible that the dog may have attempted to bully Oreo at some time in the past, but Oreo apparently showed it who was really in charge.
So the pit, will mock it with a few barks, but will eventually back down instead of risking getting any more of "Oreo's lessons".
cheers babe!

Actually, it sounds like the excitement of prey drive. The dog is probably working up an overwhelming desire to injure or kill your cat.
Sounds like you are watching a dangerous dance, at some point, someone is going to get hurt or worse. If not your cats (or you), it could be some poor unsuspecting visitor with a nice indoor kitty that the dog finally takes out the aggression on.
